Big Mamma launches Napoli Gang

Tested during confinement, the delivery service of groceries and Italian dishes from the Ober Mamma and Popolare team is expanding and diversifying, from July 10, in Paris.

Born from the lessons of the Covid-19 crisis, the last baby of Victor Lugger and Tigrane Seydoux, already at the head, since East Mamma in 2015, of twelve trattorias in Paris, Lille, Lyon and London will be a restaurant ... virtual ! After having successfully tested click & collect in its various restaurants during confinement, Big Mamma launches on July 10 Napoli Gang, its “online Italian quality food delivery restaurant” . The objective? Become the benchmark for transalpine eating at home, at affordable prices (and with recyclable packaging).

The meats, antipasti, pizzas, pastas and homemade desserts ordered online will no longer be prepared in the group's restaurants, which have returned to service and are running at full speed, but in three kitchens located in the north, center and south from Paris (intra muros). The east and west of Paris, too far apart, are therefore not yet served by this new service. No more than the other cities where Big Mamma is present - "We are starting out humbly ," explains Victor Lugger. It is a new profession that we are learning ” .

"Our challenge is to deindustrialize pizza at home, in the purest Italian tradition which is dear to us, and to bring small producers to our customers ", says the 30-year-old again. Be careful, however, "it's not Big Mamma at home, but 100% new recipes that we created expressly for delivery: hours of work and cooking tests were necessary for our chefs!" New products and suppliers were also sourced for the occasion.

Despite the name of the brand, the menu is not strictly Neapolitan, but reflects "modern cuisine, fusion of different regions, like our young Italian chefs" : pizzas (ten per season), in particular, are finer (Roman style), in order to "land crispy-soft at home" . The comforting menu - rather short - also includes a side of street food fried foods (truffle arancini, bucatini carbonara donuts), a selection of cold cuts, two pasta dishes (including delicious lasagna with Tuscan pig stew) ), some ice cream and desserts (notably a tiramisu different from the best seller served in restaurants, "very Italian" according to Lugger). Finally, the e-shop will offer drinks (organic wines, cocktails, craft beers) but also Big Mamma t-shirts, and eventually perhaps the colorful dishes characteristic of latticed trattorias.

"Changing people's lives with pizza"

This new entity, for which around thirty people have already been recruited, is a mission-oriented company, whose credo is "Changing people's lives with pizza". A social and environmental dimension that materializes through positive discrimination in hiring (in partnership with three associations), diploma courses and incentive for all employees. The profits from the sale of t-shirts will also be donated to associations working for equal opportunities.

But also an engagement on the delivery, subject to many controversies, in particular on the working conditions and remuneration of the deliverers. "We have made our partner Uber Eats sign a charter, and are trying to use our weight to make the delivery sector sustainable and sustainable," explains Lugger. Big Mamma is also committed to donating 1% of the turnover of its direct orders to delivery men.

The order will be placed first on Uber Eats, then also on a dedicated site, from September.
