The Rosalich Madness has really started in recent years • Maya Darin explains how to prepare the most pampering and comforting Rosalich for Saturday morning coffee
A soft and warm focaccia dough that wraps in a liquid and hot filling of Nutella or lotus spread is a treat reserved for those who know how to do it. The neutral dough in taste and wonderful in texture is the perfect match for this sweet and exaggerated filling. True, the dough preparation stage is long, but the quick and short baking provides a great reward for the patient among us.

List of ingredients for 30 units:
3 cups white flour or focaccia flour
1 tablespoon dry yeast
1 teaspoon salt
5 tablespoons olive oil
1 cup (240 ml) lukewarm water
For the filling:
Lotus
spread Nutella spread
For decoration:
powdered sugar
How to prepare:
1. In the mixer bowl, put all the dough ingredients except the water, add three quarters of a cup of water and start kneading, if necessary add more water slowly until the dough becomes a flexible and uniform ball.
Put for about 10 minutes, transfer to a bowl greased with a little olive oil and roll the dough so that it is coated in oil on all sides.
Cover and leave to rise for an hour and a half.
Lightly flour a work surface and take the dough out onto the surface and divide it into four balls
. 5. Grease the surface of the dough slightly, cover with a towel and leave to rise again for 20-30 minutes.
6. Meanwhile, preheat oven to 230 degrees.
7. Roll each ball on a floured surface into a thin rectangle about 2 mm thick, and generously spread with lotus or Nutella spread, roll into a chunky roll.
8. Using a serrated knife or pizza roller, cut into slices about 3 cm thick and arrange on a baking sheet. Baking, in spaces.
9. Bake for 5 minutes, until the rosemary swells nicely and gets a touch of color. The quick baking at high temperature is what will keep the pastry soft and smooth.
10. Remove from the oven, sprinkle with powdered sugar generously and devour hot.
