What exactly is a doner kebab? That clearly defined a purity law. Positive for customers - annoying for the kebab sellers. Because now they have a problem.

  • A purity law clearly defines what may be called kebab.
  • Customers are more likely to be saved from poor quality.
  • For many kebab sellers, however, enforcing the rule is a problem.

Moosburg - Germany's favorite fast food , way ahead of pizza and currywurst: kebab . But it is precisely because of this name that an entire industry is in turmoil nationwide.

Murat Dinsel is no ordinary kebab seller . With clever marketing, he has repeatedly made speeches about himself and his Turkish snack truck at the Moosburger Bahnhof (Freising district) - for example because he gives away kebabs to those in need. His fan base on Facebook is correspondingly large - and so is the response to his latest post on the platform.

Purity law for kebab kebab seller vent his anger

"Dear customers. Unfortunately it hit me too, ”he announced there. Food inspectors had told him that his kebab should no longer be called kebab, but “chicken and turkey rotisserie in bread ”. “In four weeks I have to change everything that says doner kebab,” complains Dinsel, who uploaded a photo from the official leaflet . The users' comments range from ranting the authorities to understanding and gratitude for consumer protection rules.

The fact that snack operators and often customers have recently been shaking their heads all over the republic can be traced back to a guiding principle for meat products in the German Food Book. There it is regulated what is to be understood by which food. According to this, doner kebab only contains coarsely seared sheep and / or beef, which is put in thin slices on a rotisserie. The amount of minced meat from coarsely cut beef or sheep meat may not exceed 60 percent.

Kebab purity law: strict requirements for ingredients outraged stall owners

In addition to spices, eggs, onions, oil, milk and yoghurt, it must not contain any other ingredients. According to a federal state resolution, these requirements now apply to all products that are called "kebab". Dishes with a different content must therefore be clearly named on the menu. In the most drastic case this is called "beef minced meat rotisserie with breadcrumbs, meat portion partially finely chopped". This is what it says in the leaflet of the State Office for Health and Food Safety, which was also handed out to kebab man Murat Dinsel.

Appropriate to the topic: There are so many kebab shops that it is often difficult to choose. It is useful to have a few tips on how to recognize a really good kebab, as merkur.de * reports.

What turns on the spit in local stalls rarely has anything to do with the original recipe. The main reason for this is the price pressure that producers and sellers are struggling with. If you order a doner kebab today, the bread is mainly cut into minced meat with a high fat content, which is usually provided with artificial flavor enhancers and binding agents.

Outraged kebab seller: "My customers are gourmets"

The 47-year-old Dinsel does not feel any price pressure, as he emphasizes. “My customers are gourmets, for whom the price doesn't matter.” He doesn't want to ask for more than four euros - that's what his kebab at Moosburger Bahnhof costs - for social reasons. “A lot of students come to me.” He wants to obey the authorities' orders, but he feels that they are “harassment”, as he says. “If it were up to the purity laws, then only the original Margherita should be sold under pizza today.” Dinsel considers additives such as binding agents to be necessary: “Otherwise the meat skewer would collapse.” Make sure that nobody ingests harmful substances the notice in his snack bar.

According to the Moosburger, the fact that inspectors from the responsible Freising District Office will visit many of his colleagues is causing a lot of trouble in his profession. "This can cost 2000 euros if they have to change their light panels, flyers and websites." Murat Dinsel is largely spared: "I'm a graphic designer, I do everything myself."

Read about it: In 2018, the EU Parliament discussed a new regulation on the topic of kebab. It was about the use of phosphate in frozen kebab skewers. The stall owners were afraid of this regulation because of a very specific concern.

In the night from Monday to Tuesday, January 14th, a white Mercedes crashed into the front door of a Nuremberg kebab shop. The car was then no longer drivable.

The dream of having your own kebab shop only lasts for a short time before it could burst bitterly: because a neighbor suddenly complains, the operators of the “Egeli 35” in Ottobrunn are threatened with ruin.
