Both experts we spoke to had different techniques for mixing their drinks. “We start with honey, then we pour the espresso, then we top it with tonic water, without ice,” explains Marlette.

"I personally make it seltzer first, then some ice, then espresso on top," Higgins says. “The alternative way is to make ice first, then the seltzer and then the espresso. But the important thing is to put the espresso last. "

Our recommendation is to make a drink of espresso and let it cool. Then take an 8-ounce glass, add ice, pour in lemon or lime seltzer and top it with the espresso shot.
