the day after Emmanuel Marcron announced the establishment of a curfew at 9 p.m., Stéphanie Le Quellec, chef and owner of the restaurant La Scène (Paris 8th), two stars in the Michelin Guide, announced with regret, like many of his colleagues, that keeping his gourmet table open for lunch only would not be profitable.

But, on second thought, here she has changed her mind.

In record time, she finally imagined a menu that will be served from Monday evening, in 1.5 hours flat, from 7 p.m. to 8:30 p.m.

“More than ever, our customers need us and we need them.

Keeping this link, respecting the measures and being able to keep our teams as much as possible is the only thing that drives me on a daily basis,

explains the manager.

I have also had many interactions with our clients.

They support us, we want to be there for them and show them that once again, we can adapt.

I also realized that financially there was something to be done to keep La Scène on its feet despite the closing at 9 p.m., so we are not giving up and we are reinventing ourselves, once again.

Since March 14, we have always been against the grain and we have always been very agile, so we continue in this direction ... hoping that things can get back to normal ”.

The great classics of the house will therefore be put aside to make room, each evening, for an improvisation by the chef around noble products: golden langoustine, ravioli of pincers, sparkling broth, matcha tea;

turbot "small boat" caviar, buckwheat;

poultry from the Cour d'Armoise, albufera, white truffle;

pear rubbed with muscovado, freshness of lemon balm, pear sorbet.

La Scène is not the only gourmet restaurants to adapt: ​​Julia Sedefdjian (1 star at Baieta, Paris 5th) has announced a Paris-Nice menu in 1h30 (served from 6pm);

just like Loiseau Rive Gauche (1 star, 7th) which will offer a service from 5:30 p.m. to 7 p.m. (customer departure at 8 p.m.) with an à la carte selection rather than the usual menu or even Bruno Verjus at Table (1 star, 12th) and his “Small supper” from 6 pm to 9 pm, and its flexible organization which allows late arrivals to take home the end of their dinner.
