The smoked food from Florentina Diller is an integral part of the breakfast buffet at the Hotel zum Forst in Thalhausen and is extremely popular with guests.

A jury of experts has now been enthusiastic about the skills of the 29-year-olds at the smoker and thus confirmed the good taste of the hotel residents: DLG Testservice GmbH, one of the leading service providers for quality assurance of food, has awarded Florentina Diller the 2020 Golden Prize for their breakfast bacon .

It was a long way for Florentina Diller from the first beginnings of smoking to the award-winning delicacy.

Her family, who have been running the hotel since the great-grandfather Luitpold Pfeiffer bought it in 1929, have run deer themselves.

The game romps about in an enclosure on the idyllic grounds behind the hotel.

“My grandpa used to give some meat to smoke,” reports Florentina Diller.

“But I wanted to master it myself and decided to learn how to smoke myself.

It's now been five years since the young entrepreneur and mother set to work.

But she still vividly remembers the difficult beginnings.

“I did everything wrong in the beginning,” she says and laughs.

But then fate helped her a little.

She met Sepp by chance through friends.

"I was lucky that Sepp found me likeable"

Sepp doesn't want his last name to appear in the newspaper, but he's been smoking meat for almost 60 years.

“I was lucky that Sepp found me likeable,” says Florentina Diller.

"After a few encounters, he came to the conclusion that I was the right person to reveal his secrets."

Secrets that she is of course not allowed to pass on.

"Unfortunately, I have a duty of confidentiality," says the 29-year-old with a wink.

"Only this much: It depends on how long you put the meat in and smoke it or what temperature you use." Salting is an art in particular - even more so with game smoked than with pork because it is much leaner, but also much more delicate. "

Her mother puts Florentina Diller on the right track

A salt meter helps Florentina Diller with her culinary handicrafts as does her own smoker.

Another coincidence that helped her.

She had initially bought a device from the online mail order business.

“But that was nothing,” says Florentina Diller.

Her mother Lucia Diller, who has been running the hotel for more than ten years, then put her on the right track - with the wonderfully succinct words: "There used to be a smoking oven somewhere in the house."

The daughter finds what she is looking for in the cellar.

“The stove was completely battered,” remembers Florentina Diller.

“I then had it restored.” Her father Joschi Weissenberger gave her a helping hand.

"Otherwise I wouldn't have made it."

"I was gasping with happiness"

The smoked goods are not only served as bacon for breakfast or as a menu starter, but also sausage.

The packaged products can be found in a beautifully arranged display case - as well as bacon and pepper bites and fruit schnapps.

“We also offer gift baskets,” says Florentina Diller, who is the fourth generation to work in the company.

Now the 29-year-old has contributed her first own certificate for the hotel.

And how did she react to the news that she made gold with her breakfast bacon?

“I was gasping with happiness,” she says.

But that was nothing against the reaction from Sepp.

"He was even more happy than I was."
