THE CLUB OF 30
With the only promotion of Marseillais Alexandre Mazzia at AM (against three winners in 2020), and no demotion, the best restaurants in France only climb by one member.

2 TABLES WITH 2 STARS
They were 11 last year, and are only 2 in 2021: Hélène Darroze who gets her second badge from Marsan redesigned two years ago (Paris 6th), and Cédric Deckert, from the restaurant La Merise in Laubach (Alsace).
In total, the guide has 74 (12 less than in 2020).
54 NEW 1-STAR
Out of 534 restaurants (21 more than in 2020), the promotion, greater than last year (49), is spread across the four corners of France: 12 tables in PACA, 10 in Auvergne-Rhône-Alpes, 7 in Île-de-France and 4 in Occitanie.

5 STAR WOMEN
Once again, they are only 5 to manage or co-manage restaurants among the 57 promoted: Hélène Darroze (Marsan, Paris), Coline Faulquier (Signature, Marseille), Agathe Richou (pastry chef at La Mère Germaine, Châteauneuf-du-Pape ), Juliette Busetto (pastry chef at Agitateurs, Nice) and Claire Vallée (ONA, Arès).
The latter is also the first to win a star for an entirely vegan table.
5 SPECIAL PRIZES, 11 PASTRY AND 33 GREEN STARS
In addition to its usual sommelier awards (to Vanessa Massé, from Pur & V, in Nice) and service (to Delphine Alemany, to La Closerie, to Ansouis and Marion Denieul, to Maison Tiegezh, to Guer), the Guide awarded two prizes young chef and chef, respectively to Coline Faulquier (Signature, Marseille) and Mory Sacko (Mosuke, Paris).
The two hopes also won their first macaroon.
Eleven pastry chefs are joining the Passion Dessert promotion, and 33 green stars have been distributed to restaurants (starred, plates or Bib Gourmand) committed to a sustainable ecological approach.
46 STAR REMOVALS
In total, between permanent closings, work, changes of concept or leader, and outright demotions, 46 tables are sanctioned.
13 2-stars thus disappear from the guide (including the two Parisian workshops of Robuchon, downgraded to 1 star) and 33 1-star are sanctioned (including Jean-François Piège at La Poule au Pot, or Inaki Aizpitarte at Chateaubriand).

4 AWARD-WINNING EX-TOP CHEF
In addition to the juror Hélène Darroze, double star for Marsan, three former candidates of the culinary competition broadcast on M6 won their first star: Coline Faulquier (Signature, Marseille), Mory Sacko (Mosuke, Paris) and Bastien Renouard (Ocher, Rueil- Bad house).
72 BIB GOURMAND
The number of “quality at reasonable prices” tables rose to 524 (compared to 567 last year), including 14 promoted in PACA, 11 in Île-de-France, 10 in Occitanie and Auvergne-Rhône-Alpes.
