A baba in a baba: such is the mischievous discovery of Cédric Grolet, available for a few days in his pastry shop on the avenue de l'Opéra, for a minimum period of one month.
Like the sublime sculpted fruits that have made it famous, reserved for the Meurice boutique, this flambé baba in a cork is the first trompe-l'oeil imagined for its own address.
“I wanted to create the first Opera trompe-l'oeil. This cake has always inspired me and I wanted to reinterpret it in the same way as fruits. There is this same feeling, while respecting the true value of the product ”
commented the star pastry chef.
The creation consists of a cap-shaped baba made from brioche baba dough, soaked in Havana Club Selección de Maestros Cuban rum, flamed, then embellished with vanilla custard and vanilla whipped cream, all coated with 'a thin layer of white chocolate, itself colored to look like a big baba cap.
As always with Cédric Grolet, the visual as well as the taste are there ... And you pay: 17 € for (small) individual pastry.

Baba is one of the latest arrivals on Cédric Grolet Opéra's menu, alongside new creations: Mont-Blanc clémentine (shortbread, Corsican clementine confit, chestnut cream, vanilla whipped cream with clementine zest), Fleur de coffee (shortbread, chocolate and Alain Ducasse coffee ganache, coffee praline, soft coffee biscuit, coffee whipped cream, coffee milk jam) or Paris-Brest Vanilla (shortbread, crispy vanilla praline, choux pastry, milk jam) vanilla, Paris-Brest vanilla cream).
Good news for foodies, from January 24, CGO will also open on Sundays, between 10 a.m. and 5 p.m., for take-out and click and collect.
Delivery is also always available, on weekends only, in Paris and in the inner suburbs.
