Michelin-starred chef Julien Dumas leaves the Lucas Carton institution

The forty-something committed to a cuisine respectful of marine resources and the environment, has just announced his departure after seven years at the head of the kitchens of the legendary restaurant on the Place de la Madeleine, in Paris.


After seven years at Place de la Madeleine, Julien Dumas returns his apron to devote himself to new adventures.

The Lucas Carton restaurant, owned by the Vranken family, where Alain Senderens shone three Michelin stars for twenty years, before returning them in 2005 to refocus on more accessible cuisine, must find a new chef in anticipation of the reopening of the restaurants.

Native of Grenoble, passed through the Plaza Athénée of Alain Ducasse period Jean-François Piège, which he will follow at Crillon, but also the Domaine des Andéols (Vaucluse) and the marine brasserie Rech (Paris) alongside Jacques Maximin, Julien Dumas had succeeded to the major figure of the nouvelle cuisine in 2014, and little by little left his mark on the institution, until hanging up a star.
