The French can not wait to return to the restaurant.

According to an EasyPanel study for the Culinary College of France (CCF), which Le Parisien unveils exclusively, 94% of them say they are ready to go there more often when they have reopened.

This plebiscite-shaped figure is not the only surprise in this poll.

More than two-thirds of those questioned would even agree to pay in advance, upon booking, which would undoubtedly have been unthinkable before the pandemic.

Even stronger: 53% of consumers would like to help finance a project for restaurateurs, and 34% could even be tempted themselves by the adventure, either by setting up their own business or by becoming partners in an establishment.

This commitment is notable, as the profession is going through the most serious crisis in its history.

"The love rating is at its highest"

Something to give a little hope to the members of the Culinary College of France (some 3,000 restaurants, producers and quality artisans), and more generally to all players in the sector.

"This is the first time that we have launched a survey on the relationship of citizen customers to restaurants," explains Christian Regouby, general manager of the CCF, and it reveals an interesting trend: the desire of customers to develop a new relationship with restaurants. since they go so far as to aspire to engage with them.

These restaurateurs who are resisting the crisis

These good intentions will undoubtedly not translate massively into actions, but they testify to a strong attachment in the population, whatever the social categories.

Sometimes you have to suffer from lack to measure your attachment ... "This crisis proves how essential the social bond that is woven in restaurants is essential," notes François Blouin, boss of Food Service Vision, a catering consulting firm.

This survey by the Culinary College of France shows that the love rating is at the highest.

We ourselves will soon be publishing the results of our barometer ourselves, and I can tell you as a preview that this desire to go to a restaurant has climbed by 14 points compared to June 2020, a moment that was already very special. since it was after the first confinement, just before the reopening of the establishments.

"

The CCF survey also sheds light on the springs of this love rating.

What the French look for in restaurants first and foremost is “hospitality, service and atmosphere” (99%) but also market cuisine and seasonal products (94%), which come first. the gastronomic level of the cuisine (80%).

"The results observed confirm the signals of an awareness identified in recent years and which seems to have accelerated since" the entry into Covid ", continues Christian Regouby.

The traditional restaurant is part of our heritage and remains at the heart of our culture for the future, a place of reference for social ties, sharing and exchange.
