Closure of restaurants obliges, impossible for gourmets to discover the new setting of Pascal Barbot and Christophe Rohat.
Never mind, the chef, until then two starred rue de l'Annunciation, gives a foretaste of his new menu by offering Parisians an Easter menu to take away in 5 sequences: “raw” fountain salmon. marinated ”, tender sorrel, vegetable ravioli & haddock;
green asparagus from Provence, roasted "honey grapefruit", asparagus shavings and lovage cream;
poached shrimp, spicy peanut paste, papaya and green mango salad;
the traditional Paschal lamb, Astrance version, in a shoulder of milk-fed lamb confit “like a navarin”, geranium juice, dates and chili;
Meyer lemon tart and limequat from Bachès, fruity green olive oil and rosemary flower.
