Just before life gets back on track, tomorrow (Saturday) evening all over the country will celebrate the Maimonides celebrations.

Jackie Kadosh, head of the Jewish community in Marrakech, says that there is a well-known custom in the city, where Muslim residents bring chametz - flour and cakes as a gift, on the occasion of the end of Passover.

"It's a big thing for them, they learned it from their parents and grandparents. The belief is that they share their good fortune. I believe they will do it again this year, they will be allowed to come and say hello, but not much more than that.

"Families do not plan celebrations as usual because it is forbidden. We are not going against the state. 'Dina Damlakota Dina.' But every family will make a celebration at home."

He says that the eyes of Moroccans, Jews and Muslims alike, are married to Israel.

"Every time we meet on the street, we say 'Congratulations to the Land of Israel' on the vaccines. With the help of the name, everything will pass in peace. Have fun and dine - in Israel and around the world."

The recipe for escape

Ingredients (for about 30 pancakes):

• 1 kg of flour

• 1 tablespoon sugar

• 2½ glasses of water

• ½ a teaspoon of salt

Preparation:

1. Put all the ingredients until a soft and smooth dough is obtained.

2. Cover and set aside for about an hour.

3. Pinch small balls the size of a ping pong.

4. Grease a work surface well and arrange the dough balls on it.

5. Using oiled hands, flatten each of the dough balls until a thin, transparent pita-shaped sheet of dough is obtained.

6. Heat a tablespoon of oil in a pan and carefully place one of the sheets of dough in it.

7. After about a minute, place the next escapee on top - and turn.

This is continued with the rest of the dough sheets without removing the escapes from the pan, until a pile is obtained.

8. Serve with butter and honey.
