Avian influenza meets Easter: what about Easter egg production?

Interview with Maria Holzer (29) from Geflügelhof Betzinger in Lochham.

Lochham

- Avian influenza is on the rise in Germany.

But the Easter egg production at the Betzinger-Hof in Lochham is in full swing, reports Maria Holzer (29) from the family business.

A conversation about free-roaming chickens, restless customers and egg trends.

Ms. Holzer, avian influenza is spreading more and more.

Is Easter egg production in danger this year?

“No, not in our company.

We have enough eggs.

And our business is running at full speed - as usual at Easter.

Since Corona, the value of regional products has increased anyway.

And because of the lockdown, people are more home and shop more.

So we have good sales.

In this way we can compensate for our failure in catering - normally we also supply restaurants - with private direct sales. "

According to previous knowledge, the risk of avian influenza for humans is limited.

Do you still feel the unrest among consumers?

“Yes, many consumers are unsettled, especially because of the compulsory stable.

Many call us and ask why our chickens are still allowed to run around outside. "

And what do you answer people?

“That the compulsory stable only applies in risk zones, and luckily we are not one of them.

I always refer people to the veterinary office in Miesbach.

There you can find out more information. "

Even so, you also have to adhere to stricter security measures.

Does that have a strong influence on your day-to-day work?

“We have to wear certain protective clothing such as overshoes and overalls.

And we have divided the animals in our stable into two age groups.

But for us the effort is still limited at the moment. "

If a farm is obliged to keep stable, it is no longer allowed to sell “free-range eggs”.

Does that have a positive effect on your business after your animals are still allowed to go outside?

“There are certain people who prefer free-range eggs.

And overall they are already in short supply because of avian influenza.

At the moment we are not feeling the change that much because, as I said, there is always a lot going on at Easter. "

According to the district office, there have so far been no cases of bird flu in the district of Miesbach.

Is the fear among breeders and keepers still great?

“There is a certain amount of unrest, but don't panic.

We just hope that bird flu doesn't get too close to us.

If necessary, we would have a winter garden for the animals.

That is a real luxury. "

How do you generally prepare for Easter - the most stressful time of the year?

“We always make sure that the chickens of all ages are laying for Easter.

That means we buy young animals in good time.

They only start with small eggs.

They are usually not that popular with customers.

At Easter they lay eggs in M or L class.

During Easter we usually have around 7500 chickens, which lay between 7300 and 7400 eggs per day.

After Easter there will be a good 2500 fewer animals. "

Do customers prefer to buy the eggs colored or in kind?

“There are already some people who need to color and bake eggs themselves.

In recent years, however, there has been a growing trend for people to buy more colored and boiled eggs.

And that long before Easter.

We dye about a quarter to a fifth of our eggs in Erding.

We only sell our own eggs.

This is not the case everywhere.

The eggs often come from abroad and are colored here, then they are already considered Bavarian eggs. "

And which colors are the big sellers?

“All year round, people prefer to buy brown eggs from the brown chickens, which are much calmer.

Only at Easter is the demand for white eggs greater because they are easier to dye.

Certain colors like yellow go better on white eggs.

But brown eggs are also good for red and blue.

We always mix our boxes, so I don't even know which colors are most popular. "
