Sebastian Ullmann and Mario Frank, both 34 years old, want to give people access to the world of coffee.

Because the two of them, who grew up in Groebenzell and Maisach, are convinced that most people in Germany only know the "industrial pulp".

Beans from Brazil are chocolatey

"If you value the quality of the fruit and the harvest and emphasize the character of the respective green coffee when roasting, there are drastic differences between the varieties," enthuses Frank.

Beans from Brazil tasted more chocolaty and nutty, while coffees from Africa have a fruity note.

"When roasting, you can use the duration and temperature to enhance the flavor," explains Frank.

Frank gained a lot of knowledge about this during an extended stay in Australia.

“I got to know coffee there in a completely different way than in Germany.

In every coffee shop you had a huge selection - comparable to a wine list.

It was really fun to try it out. ”He stayed in Melbourne for some time and worked there as a barista.

Both have a lot of gastro experience

When he returned to Germany, he raved about it to his school friend Sebastian Ullmann - who is also a passionate coffee drinker.

In 2016, the two decided to found a company that offers coffee catering, i.e. comes to events with a mobile coffee bar.

Both already had experience: Frank had worked in the catering sector for five years, Ullmann was a system restaurateur.

“Everyone is looking for offers that are desirable for events.

We were sure that we could do that with high-quality coffee because we give people a good experience, ”says Frank.

Corona stopped coffee catering

You were not mistaken.

"It went really well and went steadily uphill," said Frank.

They offered their coffee at trade fair stands of various companies, at Rock im Park or in a VIP lounge at the Le Mans 24-hour race.

But then she stopped Corona.

Experiments in roasting

“Larger meetings were no longer possible.

It quickly became clear to us that it wouldn't be over in a couple of weeks, ”said Frank.

You'd had in the back of your mind to roast your own coffee for a long time, but never had the time to do it.

So they used the pandemic to set up their roastery.

They rely on so-called specialty coffee.

This means that they pay attention to the high quality of the green coffee.

The coffee cherries are harvested by hand so that unripe or broken fruits can be sorted out.

The beans are not roasted as dark as with industrial coffee, so that the roasted aromas do not obscure the taste of the coffee.

“We tried a lot with the temperature and duration when roasting.

Even if you only change nuances, you immediately get a completely different result, ”says Frank.

The result is currently five filter coffees and six espressos, which cost between 25 and 35 euros per kilo.
