Already thirty people are lining up rue Terme in Lyon (Ier) in front of the blue sign of "Chëf" this Wednesday morning.
It is only 11 o'clock, but the restaurant voted "best kebab in France" by the program "Très très bon" by food critic François-Régis Gaudry on Paris Première attracts crowds like every day.
Open for less than nine months, the fast food was already a real success locally.
This consecration has since translated into a daily crush.
“We currently have to count 1 hour and 15 minutes waiting for services,” explains embarrassed Redouane, who created this kebab with his sister Besma.
It took them four years to set up their business.
“Our observation was simple.
We said to ourselves: "
What's
the kebab of our dreams
?"
"We therefore thought of each product separately to have the best possible final sandwich," explains the 30-something.
Thirty bread tests and twelve marinade tests later, their sandwich has already conquered France.
Do without delivery platforms
But every coin has its flip side.
“It worked very well before but, since the competition, it's borderline uncontrollable.
Our adaptability must have been enormous, ”admits the boss.
After the coronation, the staff went from seven to twelve, it was necessary to change supplier, the first not being able to deliver enough meat, stop deliveries and reorganize the restaurant.

“If it's a lot of work, this title has also allowed us to gain autonomy and independence because we can do without delivery platforms. It is a chance in this period of Covid ”, rejoices Redouane. However, the opening of a second restaurant is not current: “This title is difficult to carry. So we prefer to focus on this one and do it right. "
