La Halle aux grains, the restaurant-café of the Bras house

The chef at Le Suquet (Laguiole) and his father are in charge of the museum's upscale dining area. Imagined with seeds and cereals as a common thread, from June 10, the place will provide continuous service every day, from noon to midnight.


No self-respecting museum without its restaurant-café! For his new Parisian site, François Pinault has seen the big picture. And calls on an emblematic family of French gastronomy, the Bras. Michel, who launched Le Suquet, in Laguiole (Aveyron), a 3-star Michelin hotel and restaurant in 1992, and his son Sébastien, who took over the reins of the futuristic vessel in the heart of Aubrac in 2009. It is together that they worked on their first table in the capital. "We receive many proposals," explains the duo, who opened a brewery at the Soulages museum in Rodez six years ago. But we only accept those that have substance, meaning. The history of this building, originally dedicated to the wheat trade in the 18th century, its strong link with Parisian food, and its unique architecture immediately won us over.It was a real crush! We had carte blanche to infuse our state of mind and our cuisine into this particular project. ”

History which inspired them the common thread of the place: seeds, cereals, shoots, legumes, oilseeds. But don't expect a vegan canteen to snack on! These grains, sprouted, roasted, fermented or even infused, an integral part of the cuisine of Les Bras "little things", will be present in the dishes by touches. Careful but not superfluous creations, in homage to all the terroirs, with nods to Aveyron and the capital. Like the poetic titles of the plates: large grilled Île-de-France leeks, creamed with Gwell, leek greens and grilled soya mill tour; button mushrooms stuffed as it should with mushrooms, flight of oats crystallized with black pepper; Thin onion tart from Lézignan, here and there shavings of bottarga and fish roe;fire-dried Aubrac farm beef tenderloin, buttered toast with pink radish sprouts… Seeds, spices and condiments from all over the world will be waiting for you. And, for dessert: millefeuille of caramelized squash seeds, cream and wet vanilla cookie; under a veil of kasha, chicory and chickpea meringue, pea shoots and amaranth milk… But also the famous chocolate coulant created by Michel in 1981.

If the Bras do not aim for a Michelin star and wish to reach as many people as possible - museum clients, Parisians and international tourists - quality standards remain high and prices sustained: “We are in a premium bistro, with a welcome, cuisine and service that are an extension of Le Suquet. ”

Bright and contemporary

Located on the third and last floor, with several alcoves that can be privatized, with a view of Saint-Eustache, Beaubourg and La Canopée, the bright and contemporary restaurant with a hundred seats, fitted out by the Bouroullec brothers, will open continuously from noon to midnight. , offering snacks and desserts in the afternoon. The team of around sixty people is made up of many former members of Le Suquet, steeped in its DNA, in particular the chef Maxime Vergély and the director, Mathieu Muratet. And the Bras were keen to highlight their territory even in the arts of the table (outfits, Laguiole knives).

A visit to the museum shop will allow you to buy chocolates, caramel with squash seed spread and "niacs" (house preparations to spice up dishes).

Enough to breathe a good breath of Aubrac air and immerse yourself in the unique universe of the Bras house ...
