At first glance they are confusing because because
of their size and all the extra ingredients that they have on top they seem like
pizzas.
But they are not.
This is a new minute that is all the rage in bars and restaurants: the giant milanesas.
The version to share of the favorite dish of the Argentines today is a trend, it has been installed in restaurants and deliveries and is the passion of crowds.
There is no doubt that lately fashion is going to the side of excess.
They are dishes with a high visual impact like hamburgers dipped in a sea of cheddar cheese.
In the case of the
XL Milanese there is also a succulent crowning: it is covered with cheese, fried eggs, tomato and bacon, among other ingredients.
Of course, it takes more than three people to agree to eat it.

.
Therefore, the first question that arises is how they manage to make them in such a size.
Even those prepared by the neighborhood butcher are smaller than these specimens, which
can weigh from 600 grams to just over a kilo.
In order to eat them you need to gather at least 3 people.

In case it is necessary to clarify, it is not that they are cuts of giant cows.
There are techniques to make the meat
, which can be buttock, loin ball or chorizo steak,
is this big
.
The first is called spliced:
"We use the buttock and by tapping it gently we make it expand and reach the right size,"
says Denis Pitrelli, a partner at La Catedral, a restaurant with 5 branches of giant hamburgers and Milanese.
The giant milanesas admit as many toppings as the imagination allows.

At Dorita, a traditional Palermo grill, they use another method: “We chose
chorizo steak
, weighing approximately 500 grams.
It is cut in a butterfly style, placed between two pieces of
plastic wrap and carefully trodden to the desired size, which is a fine and juicy XXL milanesa ”, explains David Ribulgo, the chef behind this bomb dish.
Like the pizzas, such a size of milanesa has space to hold the most varied combinations of
toppings.
You can find
traditional ones such
as napolitana, fugazzeta or Florentina and some much more daring
and original such as those that come with a
mac and cheese
topping.
Of course, most of the giant milanesas have fried eggs.
If you want to prepare them at home, you already have the techniques and the secrets.
If you prefer to try them on the spot, we leave you a guide with the best giant Milanese in Buenos Aires.
Of course,
look for volunteers because alone you will not be able to eat it all.
