The Crème de la Crème Pommes Frites starts with Chipperbec potatoes.
They are blanched in vinegar and champagne.
They are then fried in pure goose fat, not oil, and not once but twice, so they are crispy on the outside and soft on the inside.
Next, they are served on a glass plate with an orchid, thinly sliced truffles and sprinkled with edible gold and garnished with truffle salt and truffle oil.
The potatoes are served with a Mornay cheese sauce that is also infused with truffle, a rare seasonal mushroom.

"The truffle is the main star here," said the company's executive chef, Frederick Schoen-Kiewert.
Like many restaurants, Serendipity closed during the COVID-19 pandemic and Calderone and Schoen-Kiewert thought the fancy fries would be a good way to announce their return.
And it is working.
There is an eight to ten week waiting list to try the fries.
"It's been a tough year and a half for everyone, and now we have to have fun," Calderone said.
