Buenos Aires

turned green

.

In the last year and a half, even during the pandemic - or perhaps it should be said, also because we are experiencing the pandemic -

the plant-based gastronomic offer - made exclusively with food of plant origin - exploded

.

This relatively new concept as a marketing strategy refers to

food produced from plants

.

And of course it seeks to attract vegan consumers, vegetarians and the more permeable flexitarians (those who prefer vegetables but occasionally consume something of animal origin).

Buenos Aires gastronomy, always attentive, took note.

Thus, to the already famous restaurants,

 proposals

of different price and variety were added

.

In some cases they are purely vegan;

in others, vegan is the rule but there are vegetarian options (which in this case can include foods of animal origin such as milk, eggs or cheese) and some add some meat to include flexitarians.

Here, a guide to some of the

classic and new restaurants

to follow the City's plant-based route.

1- Sacred

Avocado masala, one of the classics of Sacro.

Sacred Photo

The Palermo restaurant was one of the first to demonstrate the sophistication that a vegan dish can achieve: since 2018, it has served

food from the world based on plants and mushrooms

.

The menu is divided into snacks, soft and strong, all to share and with variations according to the seasonality of the ingredients.

Some of their classics: kimchi dumplings, avocado masala and sweet potato ravioli

.

And some of the dishes they just added: plantain tostones and cocoa and wasabi mousse.

Creative drinks, specialty coffee and a very good list of organic, natural and biodynamic wines.

2- Mudrá

Mudrá's vegan sushi.

Photo Rafael Mario Quinteros

The American chef Matthew Kenney proposed from the first place in the elegant Patagonia Floor a

haute cuisine proposal

, in which

the variety of

vegan

sushi

stands out

.

Here we

do not seek to imitate fish, but to think of each piece as a small explosion of flavors

and they achieve this with mushrooms, nut creams and a skillful use of seasonings.

They also serve dishes like their classic mousakka and very good pizzas.

It has an express branch in the Bellini tower in downtown, with many dishes from the original menu.

Av. Córdoba 3942 (Almagro) and Paraguay 831 (Retiro), @mudraplantbased

3- Sampa

Grilled girgolas with bean puree, a must see from Sampa.

This Villa Crespo grill is presented as 99% vegetarian

(because they want to leave 1% free for a proposal outside of this mold), but most of the dishes on the menu are vegan.

Many textures, colors and flavors in chef Leonardo Chafud's creations, always in front of the grill.

It has a very nice bar to also enjoy the experience of preparing each of its proposals, which in small plate formats invite you to share.

Recommended: the grilled girgolas

with bean puree, roasted onions and tapenade of capers,

sun-

dried tomatoes and olives, and

the

potato

keppe

stuffed with portobellos

, walnuts and mint with roasted cabbage salad, creamy chestnut and fried onions.

4- Peppermint

Avocado toast and mint lemonade, a classic of natural cuisine.

Photo Peppermint

It was one of the first restaurants on the boulevard Caseros in Barracas

, which always bet on a

natural cuisine

both in the dishes and in the drinks, of which they have a wide variety of lemonades and detox juices.

To the market where they sell take-out products, they have now added a new place, a

100% plant-based

burger joint where they serve soy burgers and another made from mushrooms or aduki beans.

In the restaurant,

there are more elaborate dishes such as crispy avocado with lime marmalade or cauliflower curry

.

And they have very good vegan ice creams.

5- Buenos Aires Green

One of chef Mauro Massimino's vegan cakes.

IG @buenosairesverde

The chef Mauro Massimino is a diffuser of

natural food, organic and

raw

(raw)

from Palermo restaurant and also had cycles on the screen of the Gourmet.

Most of their dishes are vegan and they have many TACC-free options.

Some of those that were erected as a reference in his menu are the

"meat"

empanadas

without meat

and the vegan "tuna".

which he uses in sandwiches and cakes, in addition to his rice or quinoa woks and his power pizza.

Large bakery, sourdough breads and many raw sweets, including various cakes, and specialty cafeteria.

Gorriti 5657 (Palermo), @buenosairesverde

6- Donnet

The fainá tuco and pesto, a Donnet classic.

Photo Donnet loves you

The star of Manu Donnet's restaurant in

Chacarita

are their

mushrooms

, which they prepare together with other organic or agroecological vegetables, always in season.

They do not use any derivatives of meat or dairy, nor can they.

In their processes they resort to fermentation, sprouting and dehydration, with which their dishes fall into the categories of

vegan, raw vegan and gluten free

.

As the menu is seasonal, it varies weekly

, but there are classics that they always keep, such as the fainá tuco and pesto, the Donnet mushrooms and the white stew.

And in a pandemic they also added a vegan sushi.

Av. Jorge Newbery 4081 (Chacarita), @donnet_te_ama

7- Side V

Los vaos, one of Lado V's street food options. Photo Lado V

Like ying and yang, the same owners of Lado A artisanal delicatessen in Lado V explore 100% vegan cuisine in the city's

first

plant-based street food

.

Yes, there are not burgers with original ingredients in the sandwich (such as fried plantains or kimchi mayonnaise), but

the best thing about the menu is that it does not seek to remember the flavor of the meat,

as in its generous nachos with guacamole and the nuggets of mushrooms with fries, or their also very tasty mushroom sticks.

Cocktails, beers, specialty coffee and veggie options for afternoon tea.

Honduras 4969 (Palermo), @ sidev.bsas

8- Vegan Fox

One of Vegan Fox's vegan burgers. Photo IG @ veganfox.goodburger

Another yin and yang,

Kevin Bacon owners'

plant-based

burger

joint associated with NotCo, the company that produces Not Burger.

A lot of proposals in their smash not burguers (highly recommended the one with Jack Daniels BBQ sauce, double cheddar and crispy onion), breaded burgers and chicken medallions.

As in all fast-food

they obviously have French fries and nuggets,

and they also recently added the vegan mac & cheese, which is served alone, on the fries and even in a hamburger (the Mac & Cheese burger).

Gorriti 5213 (Palermo), @ veganfox.goodburger

9- Let it V

Plant-based fusion cuisine in Let it V. Photo @ letit.v

They are actually two proposals, not only 100% vegan, but also

gluten free

.

Let it V, the restaurant, offers

fusion cuisine

with organic and

seasonal

ingredients,

ranging from sushi to pokes and vurritos.

Vakery –which for now shares space but will soon be an independent place–

is a

specialty bakery and cafeteria

that also works with organic fruits.

Recommended: curried

chickpea (chickpeas, white and purple onion, colored

bell

peppers and roasted banana, accompanied by white rice with coriander, pineapple chutney parsley),

avo-toast focaccia and carrot cake.

They also serve brunch.

Costa Rica 5865 (Palermo), Thames 747 - Mercat Villa Crespo (Villa Crespo) and Honduras 5869 (Palermo), @ letit.vy @ letit.vakery.

10- Veggie Middle East

The falafel, star of Veggie Middle East.

Photo @veggiemedioriente

The restaurant is promoted as

falafel heaven,

and these delicious crunchy chickpea balls are its star: alone, in salads, in a bowl with fries, in chops and in sandwiches, all veggie.

They also have varieties of hummus.

Suipacha 532 (San Nicolás), Thames 747 - Mercat Villa Crespo (Villa Crespo) and Junín 1795 (Recoleta), @veggiemedioriente

11- Jaam

Yellow curry, one of Jaam's dishes.

Photo Jaam Kitchen without animals

"Kitchen without animals"

is the definition of this restaurant in San Telmo created by a group of friends and captained by chef Alejandro "Nitu" Digilio.

Most of the dishes, in addition to

plant-based

, are

gluten free

.

The fainá with romesco, the lentil pâté with focaccia and the yellow curry (with gírgolas, baby carrots, grilled zucchini, fennel, red onion, grapes, pineapple, turmeric pickles and citrus-scented rice) are among the most requested dishes, and they

also sell out the

vegan locro

every time they prepare it for the national holidays.

Drink menu with natural soft drinks, organic wines and drinks.

Bolívar 916 (San Telmo), @ jaam.santelmo

12- Surge

Aguachile with papaya and apple, a Mexican dish from Oleada.

Photo @ oleadaplantbased.ba

The new project of those responsible for Mudrá

is the city's first

plant-based

(and

gluten-free

)

Mexican restaurant

, which has just opened in Palermo.

Corn chips with guacomole and walnut cheese, quesadillas with plant-based cheddar, and tacos, of fried mushrooms, al pastor with plant-based meat and black beans, among the featured dishes.

The cocktail bar

, designed by Alex Caio,

also has a very important role

, with signature drinks made with sea water, natural ferments and fruits, which are

sugar free

.

Fitz Roy 1722 (Palermo), @ oleadaplantbased.ba

13- Haulani

Haulani ice creams now have their own premises.

Instagram photo @haulani_argentina

The vegan ice creams that were sold in bars and markets now have their own ice cream parlor

(or

vegan creamery

, as they call it) in Mercat Villa Crespo.

Their ice creams are made with coconut milk, and they are very creamy like non-veggie ones.

Some flavors?

Coconut, of course, and also chocolate, passion fruit, and matcha and vanilla.

They can be ordered in a vegan cornet, in a glass or pot as in any ice cream parlor, and add vegan toppings such as

coconut caramel

or a mix of caramelized seeds.

They also have paddles.

Thames 747 - Mercat Villa Crespo (Villa Crespo), @haulani_argentina

14- Nueza House

Hazelnut alfajor and vegan chocolate ganache.

Instagram photo @casanueza

The inauguration of this venture by the young sisters Agustina and Catalina Azcuy, in full quarantine, was a surprise and an immediate success:

a specialty cafeteria with a wide range of vegan pastries -

and also gluten free in some cases.

Croissants, cookies, alfajores and cakes, as well as savory options such as sourdough toasts with cashew and avocado spread are part of the proposal.

They also have a warehouse with take-out products.

Lavalleja 1373 (Palermo), @casanueza

15- Mercat Villa Crespo

Mercat Villa Crespo has several vegan options.

Photo Germán García Adrasti

The creators of this new gastronomic market were raised from the beginning to be inclusive with the various food choices and that is why

all the premises have at least some

plant-based

proposal

.

But in some it is directly the main part of the offer.

This is the case of the aforementioned

Let it V, Veggie Middle East and Haullani

, in addition to

Epica

(which serves bowls that each diner can assemble to taste with vegetables and proteins),

Organic Earth

(salads and vegetarian wraps) and

Vedanna

(plant-based pastry. based on tea) among others.

Thames 747 (Villa Crespo), @mercatvillacrespo

16- Fifi Warehouse

The croissant stuffed with Fifi avocado.

Photo Fifi Warehouse

Chef Luciano Colombi opened this restaurant in 2013 with a

healthy and organic

proposal

.

That philosophy deepened, and

the pandemic fueled the evolution toward 100% plant-based cuisine.

Since the end of last year, that guides both the restaurant and the natural warehouse that is also part of the project.

Some of their dishes:

potato cake with tempeh

, tofu, mushrooms and raisins, croissant stuffed with avocado, green leaves, marinated cucumber and sumac, and

raw cocoa cake

topped with raspberry and beet.

Gorriti 4812 (Palermo), @fifialmacen

17- Eggs & Gree

ns

Eggs & Greens brunch has vegetarian and vegan options.

Photo @eggsngreens

In this cafe-restaurant the menu is designed by a nutritionist and is

aligned with new trends in food

, among which

keto, lactose-free, vegetarian and vegan options stand out, as well as being

all gluten-free.

The customer can make their own dish by choosing a protein with its garnish, plus the complimentary shot of kefir.

They also have patisserie and on weekends, brunch.

Bonpland 1617 (Palermo) and Av. 25 de Mayo 107 (San Isidro)

18- Chui

The pizzas have 48 hours of fermentation.

Photo Chui

There are those who say that it is

the first restaurant designed for this context of pandemic because of its huge garden and outdoor patio

in what used to be a wasteland.

Loyola 1250 (Villa Crespo), @chui.ba

19- Estilo Veggie
