The business idea had a favorable star because it came about under the most romantic conditions possible: Chauan Hussein and Bryar Aziz had just met in Istanbul, where they both happened to be on vacation.

They met on their first date, strolled through town, went out for ice cream.

This ice cream was something special, fresh and handmade, more fruity and flavorful than anything they had known before.

To be able to do something like that yourself, that would be cool, they thought, more for fun.

It should take a while, but now they are doing well with their Bavarian Ice Rolls - and are married to each other.

How to do it

Bryar Aziz scoops a spoonful of fresh raspberries onto the minus 30 degree ice plate.

The 29-year-old chops up the fruit with a spatula, then pours a white liquid over it from a small portioning vessel.

“That's the ice base,” explains Chauan Hussein.

The 26-year-old Kurd was already living in Germany when she met her future husband.

When he moved to her from Iraq, they began to seriously pursue the idea of ​​handmade ice cream.

The search for the perfect ice base alone took them a year and a half.

Again and again they ordered samples from different manufacturers, tried and experimented.

"I gained ten kilos in that time," says Bryar Aziz and laughs.

The aim was to find the exact right concentration of vanilla - not so weak that you could only taste milk, and not so strong that the vanilla taste masked the other ingredients.

“We finally found a supplier who is now delivering to us,” says Chauan Hussein.

Fast movements

With skillful, quick movements, her husband mixes the finely chopped raspberries with the liquid with the help of two spatulas. More and more, the ingredients combine to form an ice cream mass, which finally spreads out into a thin layer like a cookie dough and can be cut into wide strips. "It's not just ice cream, it's a show," says Bryar Aziz. When the two of them offer their creations together with various helpers at events, the visitors stand around the stand and watch with fascination as the “Bavarian Ice Rolls” are made.

The final step in the manufacturing process looks deceptively simple, but required a lot of practice.

Aziz presses a pedal with his foot, which increases the temperature of the plate slightly.

He elegantly removes the ice strips with the spatula and rolls them up.

Standing upright in a mug and decorated with spray cream, brittle chips, chocolate flakes, mint leaves or colorful sprinkles, the result is a delicious little work of art - almost too good to eat.

But only almost.

The range of possible ingredients is wide.

In addition to fruits such as raspberries, strawberries, bananas, kiwi, mango and passion fruit, many types of chocolate are suitable.

Strangely enough, cherries do not have to be spiced up with syrup or amaretto, but that contradicts the self-imposed purity law of the ice rolls.

Hussein and Aziz stopped experimenting with hearty ingredients.

“We once tried to make ice cream from cream cheese and salmon.

But that didn't taste good. "

Benjamin Hasse, a graphic designer friend, designed a logo for the two of them.

In 2018 they went public with their website.

The first bookings were not long in coming.

Company events, weddings, birthdays - the calendar was quickly so full that they even had to decline an invitation to the Tollwood Festival.

"Madness," says Chauan Hussein.

“Who cancels Tollwood?

But we were fully booked. "

The ice cream business is a sideline for the couple who live in Türkenfeld.

Bryar Aziz works as a barista, his wife is studying energy-efficient planning and building in Augsburg.

It is a good thing that the high season in the ice cream shop coincides with the semester break.

The very best ingredient for ice rolls, by the way, is the Turkish sweet baklava, reveals Chauan Hussein - something that is far too sweet for her on its own (“you get a sugar shock”).

But a small piece of baklava with the perfect ice base made into an ice roll - “there is nothing better”.
