Käfer's new restaurant - vegetarian, vegan, sustainable

There is a new top restaurant for everyone who loves vegetarian and vegan cuisine and for everyone who cares about sustainability: The “Green Beetle” in Schumannstrasse, by none other than delicatessen star Michael Käfer.

It hardly gets any greener: Michael and Clarissa Käfer's new Green Beetle restaurant is all about sustainability. It opens on Tuesday on Schumannstrasse (Bogenhausen). On the menu: vegetarian and vegan dishes. "The subject itself is not entirely new," admits Michael Käfer. His goal is to keep the Käfer company completely CO2-neutral in the long term. That is why sustainability was very important to Käfer in his new project. For example when it comes to furnishing: The patio chairs are made from recycled marine plastic, and part of the parquet is a 40-year-old gym floor. The service staff wears clothing made from marine plastic and organic cotton.

The dishes are put together in such a way that the guest does not notice that fish or meat is missing, says head chef Felix Adebahr.

The menu includes delicacies such as the “rich Swiss chard” or polenta with Bavarian shiitake mushrooms, egg yolks and wasabi-rocket for 20.50 euros.

The menu is not available on paper, but via a QR code.

If you don't have a smartphone, you get a tablet - you need it, and a tree has been planted for each device.

At Siggis vegan & fresh food there is no sophisticated kitchen for vegan bean counters, but down-to-earth everyday food for everyone - but vegan.

“Home cooking for the whole spectrum of society,” says Florian Högel from Siggis.

Lasagne, schnitzel - but everything is plant-based.

The “long-running hit” among the guests is, for example, the “Crispy”, an “anti-hunter schnitzel” with a hearty mushroom and cream sauce with a potato and cucumber salad for 15.90 euros, and the vegan gyros “Immun” with it Tzazicki and rice costs 13.90 euros.

The Katzentempel restaurant is known for allowing guests to stroke real cats. More and more guests are also coming for the vegetarian-vegan cuisine. “We only serve plant-based meals,” says Lisa Schultes. The aim: to keep the ecological footprint small. And: “We find it contradicting to consume animal products next to live animals, our temple cats.” There is always three sandwiches to choose from (at 12.90 euros each), burgers, bowls, salads and desserts. The “hangover breakfast” with vegan scrambled eggs costs 12.90 euros.

Only seasonal and regional products are used in the natural food store and snack bar Mother Earth.

Every day there is a vegan lunch, four fresh salads and a soup.

Fresh feed includes bowls, curries and chillies to take away without artificial additives and refined sugar. “Everything is homemade,” says owner Julia Linke. “The dishes are filling, tasty and energizing.” For example the “Antipasti Bowl” with grilled vegetables, dried tomatoes, olives and feta for 9.50 euros.
