I realized this when today I passed by what was the original space of what was for many years the most important restaurant in New York - a very "grand" and very formal place where the line of limousines turned around the corner. -And that no longer exists! Why are we so fickle? So vanes that we go as soon to one side as to the other? And it is always curious to note how in recent years trends -or trends- change very often in all aspects of our lifestyle. Very fast and without much loyalty! And that includes - of course - the style and type of restaurant that is famous in 2021 (and probably 2022) are crazy and we all go crazy to know and enjoy them!


I realized this when today I passed by what was the original space of what was for many years the most important restaurant in New York - a very "grand" and very formal place where the line of limousines turned around the corner. -And that no longer exists! And not because it was a victim of the covid pandemic, like many hundreds that have closed in half the world, but because a few years ago it was disappearing with “slow death”. The bombastic style of the maitre d ', the almost curtsies of the waiters, the strict dress rules, - and the 3 and 4 hour dinners - ceased to interest ... And little by little the formal elegance of its decoration and its uber atmosphere snobbish and 500% sumptuous - went down in history. Pouf, disappeared like a soap bubble.

And the super famous place where on more than one occasion I met celebrities such as Queen Sofia of Spain, Princess Diana, the iconic Jackie Kennedy Onassis, as well as Yves Saint Laurent, Princess Carolina of Monaco with her mother Princess Grace. - having lunch with his intimate Karl Lagerfeld - and at the table next to Elizabeth Taylor, Lucille Ball, Whitney Houston - or Plácido Domingo - each day was emptied more and more. Until - perhaps a bit cruelly - no one wanted to go there anymore and rolled their eyes in boredom when they named it!

And the world has changed a lot and very fast in the last 10 years - and the formal and extravagant - (which was sometimes like a soporific) has given way to the dynamic, the original, a very modern mixture of the super-avant-garde with its classic touch. And the restaurants that we love - and attract us like a magnet - are those that offer a modern and perfect mix of “chic” and informality!

Places that intrigue and fascinate us as soon as we enter them, with sexy and daring decorations, fun eclectic menus, fusion cuisines, signature creations, where famous chefs propose their dreams (and sometimes their nightmares!) - and although they can still be Supersnob places (many are!) allow for a looser and more casual dress code, where we feel young, bright, beautiful, and super cool. That is the experience we are looking for! Being protagonists and diners in a new 'stage' full of good vibes and charm.

The French brasserie-style restaurant is a favorite of many - as is the beautiful Balthazar in New York, a favorite of all Casiraghi-Grimaldi and David and Victoria Beckham. The restaurant style decorated with multicolored lights and pieces of art hanging from the ceiling transmits a catchy energy - as is the case with the fabulous Sexy Fish in London and soon in Miami. It is truly a sexy place to see and be seen! The Mexican cantinas are an equal success in Miami and New York, as in Paris and even London. And the tequila flows and enchants! And even the very American steak houses are beautiful and offer a modern menu where sublime mashed potatoes abound with truffles!

Ethnicity is also super 2021: Grandma's Italian cuisine goes crazy - and the delirium with all kinds of pizzas (with the newest ingredients, just as Beyoncé likes them) - becomes part of the lifestyle of many.

Just like the Japanese cuisine that chef Nobu Matsuhisa made a trend!

His Nobu around the world are the craze of every celebrity imaginable, from Jlo to Prince

Harry and Meghan Markle It is no less the original and delicious Peruvian cuisine introduced by Gastón Acurio around the world!

And the Thai, and the Vietnamese, and the Korean - and American, Cuban or Colombian comfort cuisine… An atlas of Geography at our disposal.

And all very relaxing and at the same time with a great atmosphere.

I would never finish this article if I name everything new and exciting that the world of gastronomy is in this year and the next.

But I think I have conveyed the essence of it to you.

Our lifestyle changes, reinvents and transforms itself - and I think that in terms of food and restaurants we have certainly come out ahead!
