The street food culture in Israel is thriving.
While it has always been an integral part of the essence of our culinary existence, if we ever knew how to settle for just falafel and its derivatives, today we enjoy a little bit of abundance and sophistication.
In addition to the popular street food, the best of the world also make an ascent to the Holy Land and are welcomed and greeted here.
Among all the kitchens that fit in well with the street food scene here in Israel, the Mexican cuisine did not adapt properly.
Quite strangely, the simple, colorful and happy kitchen, which enjoys many launch points with our local cuisine - did not really manage to capture the heart of the Israeli diner.
Chefs Guy Gamzo and Gabriel Israel are changing this situation.
Gamzo, who is well acquainted with the street food scene with "Nonuno" and "Bingo Burger" and Israel, the chef of the "Aria" restaurant, last night (Monday) launched "Taco Monday", a Mexican pop-up that comes out of a hole in the wall, next to the same successful chef ' Yehuda Halevi.
The pop-up will only operate on Mondays from 12:00 noon until stocks run out and in the center is one dish - a taco shot full of meat disassembled from three different chunks cooked for 24 hours, with Mexican seasoning of course.
To be served in tacos along with white onions, cilantro and more.
Alongside it, as a side dish, will also be served corn ribs, a variable special dish and margaritas created by mixologist Mosh Bodnik.
The pop-up, and this is the particularly gratifying news in this story, is the first collaboration between the two chefs and Bodnik towards a new Mexican place that will open later.
