Fooding 2022: Auberge de la Roche crowned best restaurant in France

2021-11-15T14:15:37.302Z

This establishment located in the hinterland of Nice, opened two years ago, obtains the consecration for its virtuoso and natural cuisine.

It is the price of the Michelin counter-culture, one would be tempted to say.

For 20 years, Fooding has installed a new culture of gastronomy, which aims to be closer to trends but also to customers.

Each year, its Guide (on newsstands this Thursday) also awards its prizes for the best food establishments, in the broad sense, in France.

And this year an extraordinary place took everything in its path, like a culinary avalanche.

This place, perched up there in the Tinée valley, an hour from Nice and its Riviera, facing the Mercantour massif, is called the Auberge de la Roche.

Located in Valdeblore (Alpes-Maritimes), it was imagined by a Franco-Canadian couple Mickaëlle Chabat and Louis-Philippe Riel, who wanted to leave Paris to find authenticity.

A true modern and ecological project at the same time

Two years ago, they took over this inn and made it a pearl of the mountain pastures.

They receive only a few rooms and suites, and there are around twenty seats in the restaurant.

But what a restaurant!

Morels, forest fruits, a lobster, natural wine, the cuisine of the place is intended to reflect the team that took over the establishment: passionate.

It also relies on a permaculture vegetable garden, which supplies the kitchens alongside products gleaned from local producers (fisherman from Cros-de-Cagnes, organic Lavancia farm from Puget-Théniers, etc.) as well as a house henhouse. .

A true modern and ecological project at the same time.

The culinary virtuosity of two brilliant chefs, Louis-Philippe Riel and Alexis Bijaoui, does the rest.

“We are obviously happy, delighted that our work is recognized by Fooding.

We imagined this hostel with heart and strong convictions.

A global project that makes sense if it is understood by the greatest number.

We are therefore honored by this recognition, ”Mickaëlle Chabat told us on Monday.

This putting in the spotlight is experienced as natural.

“This place is in our image and defends our ideologies.

It reflects our desire to offer a total experience, the expression of a territory with which we fell in love as soon as we arrived ”, explains the owner of the“ best table in France ”, also awarded the“ Best style room ”award. .

A double rare enough to be noted.

Because in Paris, we are sometimes a little chauvinistic, we will finally welcome the award of “Best wine merchant” obtained by Nathan Ratapu and his Rerenga Wines, located in the 10th arrondissement of Paris.

“A cellar for everyone” which should make a name for itself outside the circle of initiates.
