Alter Restaurant in Ramat Hasharon is something extraordinary.
It is led by Chef Anar Ben Rafael and it provides a special atmosphere, while the vegetable garden established next to it provides the various ingredients for the elegant dishes, and everything - in a special and intimate rural atmosphere.
Therefore, it is no wonder that as part of Avi Bitton and Malti's special journey to discover the secrets of hummus in Israel, this time they came to Alter, to prepare an interesting and surprising hummus dish in the heart of the city - pumpkin masbaha.
Chef Anar said that after the corona came into our lives, he looked for a new opportunity and found this lovely corner, with space for a restaurant and an adjacent field, and of course, lots of good food.
He replaces the chickpeas with ground pumpkin, mixed with tehini, lemon juice and garlic.
Upstairs, as in a good masbaha, pumpkin and chickpea meat that is prepared by hand, and just before starting to work - a slice of malt, which always comes in handy with chickpeas.
So it turns out that you can make chickpeas not only from chickpeas, but also from other legumes and it comes out no less perfect.
