2021-11-22T08:16:34.798Z

Terra di Seta winery, located in the heart of the Chianti district of Italy, is a kosher winery even though it does not have to be, and offers a great experience, excellent wines and even a kosher dairy restaurant • Our reporter visited there and returned with a variety of experiences and recommendations

It was not hard to miss the narrow kurkar path, which leads to the Tuscan boutique winery "Terra di Seta", located in the heart of the province of Chianti.

The paved road that led us from the city of Siena ended a few miles ago, but the Wise led us to an unpaved road in the dark woods.

Only by luck did we catch the modest sign Agriturismo Terra di Seta - which points to an even narrower path.

When we arrived, we were greeted warmly by Daniel de la Seta, the owners of the complex, which besides the winery building, also includes his private residence, three amazing and secluded accommodation units, a swimming pool overlooking the horizon, a kosher dairy restaurant (open during the tourist season), a vegetable garden where All the vegetables and leaves for the menu, a natural grove, and of course - more than 150 dunams of vineyards (almost all of them Sanjubza) and olives.

The view from all sides opens the chakras - rows and rows of vineyards in a range of fallen shades, and cypresses with an upright body that tower upwards.

Every one of our encounters with Tuscany is exciting, especially one where you discover a wonderful and kosher winery.

The de la Seta family is Jewish-Roman-rooted, and its name implies its historical occupation - the weaving of silk prayer shawls, which were common in the past among the Jews of Rome.

In his training Daniel is a biologist and served as a lecturer in the field at the Italian Academy.

To the tillage and wine came following his wife.

"We decided to buy the land at the beginning of the millennium and in the first years we sold the grapes to the area's wineries," he tells us while wandering the vineyards at sunset.

"In 2007 we realized we wanted to make our wine, we built the new winery, and from the beginning we made a decision to voluntarily subject ourselves to three regulatory systems - that of the Chianti Clásico district, organic regulation and the kosher law system. Because the vineyards were old and tired, we started planting ( "Uproot the old vines and replant the vineyards," rp) the whole area, plot after plot, and only in the next harvest, 2022, will we absorb grapes from the last renewed plot. "

Which set of rules is the most challenging?

De la Seta: "I'm not sure there is an answer to this question. Every set of laws has more complex and less complex parts, and some even overlap. For example, both according to Jewish law and according to the laws of Chianti Classico, the oldest wine region in Italy, in the first three years Do not use the fruit.

"The soil here is rocky and difficult to work, so the planting process was complex and expensive, but for this reason it is also good for vines, and their roots struggle to penetrate deep into it and reach water below the surface even without irrigation, which is forbidden here in Chianti. We built from the rocks we cycled from our vineyards. "

For the benefit of the wine production he hired the consultant Enrico Paternoster, a renowned Italian wine expert, who is responsible, among other things, for the important wine research institute in the boot country, located in Trento - Istituto Agrario di San (Michele all'Adige (IASMA). Chianti Regional.

The restaurant's kitchen serves only local and seasonal dishes, based on local agricultural produce.

Do not look for rare raw materials or fluffy dishes there - everything is based on the rustic and traditional Tuscan cuisine, but what a cuisine!

Among other things, they serve a wonderful "Papa El Pomodoro" - a thick tomato soup consisting of tomatoes, bread, olive oil, garlic and basil, various bruschettas, panzanella salad, fresh pastas, local fish and more, along with the winery's wines of course.

How simple - so accurate and delicious.

Four of the winery's five wines, by the way, are also available in Israel, so even if you have already started planning your next Italian vacation, and even if you are staying in the country in the meantime - you can start enjoying them here.

In glasses of silk

Silk, 2020 - the only one of the winery that is not red, but also made from 100% Sanjobza grapes, which have not been squeezed.

Its color, in contrast to the fashion order that dominates Israel, is bright and colorful, the nose is floral and graceful, a good body of young red fruit and a pronounced minerality with a silk texture and a long finish.

Charming wine (12 euros, available at the winery only).

Tuscany, 2019 - The winery's red entry wine, with almost no wood touch (only two months in barrels from second and third uses), is also made from 100% Sanjovese.

Complex, balanced, spicy, fruity, very rich but not heavy and has a long finish.

Earthy and with a unique Chianti character.
