Two Michelin stars in Allenby: It just sounds like a joke Israel today

Kiko Moya is one of the most intriguing and prominent chefs in Europe and his restaurant has two Michelin stars. • Quite surprisingly, he is a member of the "Pupa" restaurant in Tel Aviv in favor of a new and attractive menu.


The connection between Chef Minico's Kiko Moya elegance and the trendy Poppa restaurant is extremely intriguing.

The Spanish chef, decorated with two Michelin stars, brings with him a quiet, precise and in-depth culinary poetics.

It does not refer to its creation in the simplistic sense of criteria, but rather accurately describes each dish according to a very specific line.

In this choice there is because of the statement, since there is no gram of flattery in its portions.

He moves in the kitchen in a subdued silence, almost cutting the air, and so also cooks his creations.

For a first course in the limited menu he created for Poppa, Moya chose to serve a collection of aromatic leaves from Beit Yerukla and let them shine in their simplicity and full flavor, when served on a delicate and velvety cream.


For the most part, he treats the meat with admirable skill and gives it a smoky and charred taste.

The piece of meat is served almost naked, meat only, and is so wonderful.

The lemon dessert also receives a completely different treatment, both in the choice of plate and in the refinement and balance between all the ingredients.



Chef Kiko Moya, now considered one of the most revolutionary, interesting and prominent chefs in Europe - and who holds two Michelin stars for his esteemed restaurant, l'escaleta in Spain - was born in 1976 in southwestern Spain, in a small and magical town called Cocenteina, in the southern province of Alicante Valencia.

Moya is a second generation restaurateur.

In 1980, his father, Paco Moya, and cousin Ramiro Redrado set up the l'escaleta restaurant, located at the foot of the Mariola Mountains and overlooking breathtaking views.

These days Moya is leaving Spain to cook - for the first time!

- Outside its borders.

Together with his two Michelin stars, he will come to Israel to lead the Poppa restaurant in Tel Aviv (together with chef Lior Cohen) and spread his Mediterranean culinary gospel in the Holy Land as well.

"I am excited to come to this wonderful country," says Moya, "I know that historically, Israeli cuisine has a lot in common with Spanish cuisine. I want to delve into it and explore its spices, stews, salads and sweets."
