From time to time, but not often, the god of music sends a Mozart to earth; that of football, a Messi; that of the kitchen, a chef touched by grace. Here is one: his name is Sébastien Tantot (without a circumflex accent), he is 30 years old, and he has settled in the heart of the Compiègne forest. There are signs that never fail. We are in 2001. Sébastien, born in the Oise, raised in low-rent housing by parents not particularly comfortable with cooking pots, is 10 years old and he hangs on the wall of his room a poster not of Zidane, but of Joël Robuchon. Around the same time, thanks to a shrewd uncle, he witnesses a miracle: the transformation of a liquid into a pancake, using a frying pan.
