The most cerebral: Sapid (10th)
First launched on sale to take away during confinement under the name "Naturalist", this "refectory" with a monastic look by Alain Ducasse and Romain Meder, set to music by the Peruvian chef Marvic Medina Matos, is the accessible version of the “Naturalness” developed at the Plaza Athénée by the two three-star hotels before their replacement by Jean Imbert. Understand a cuisine that is mainly vegetable (vegetables and cereals, "seasoned" with sea proteins and cheeses, but no meat), well sourced, healthy (salt and fat are limited) and very elaborate, around tastes and associations full of pep: roasted cauliflower, buffalo scamorza and pomegranates; stew of chickpeas simmered with spices and soft-boiled egg; kiwi salad, lemon marmalade and olive shortbread.
