For his 2022 galette, chocolatier Jean-Paul Hévin is presenting his “He Was a Little Ship” collection with a creation perfectly balanced between cocoa and lime, which brings freshness and lightness.
The puff pastry with vanilla butter and dark chocolate paste contains an almond cream sprinkled with grand cru chocolate chips and a lime cream.
An “green” cake since the cocoa beans imported from Mexico for this pastry were transported thanks to the Breton company TOWT, a specialist in reducing the carbon impact.
