More traditional, the galette des Rois turns over at Laurent Duchêne to become an apple tatin when Nina Métayer's galette, designed by Alexia Lepelletier, plays the Nutcracker again with its hazelnut frangipane. At Jean-Paul Hévin, we swear by chocolate. An almond - lime cream enhances its chocolate puff pastry. The almond remains the star this year. Pierre Hermé, François Daubinet with The French Bastards, Maison Landemaine or even Christophe Michalak… They all chose an almond cream to garnish their pancakes. Acidulous thanks to orange blossom, deceptive with rye flour, Japanese with its white bean paste with ginger and its sakura tea jelly or downright exotic with its pistachio praline from Iran, each one creates its own variation.
