Unhealthy desserts must not be loaded on the body at the end of the meal.

Almond cake, citrus and olive oil
A cake in a sense with a delicate and pleasant sweetness, simple to prepare and fun to start the morning with.
Ingredients:
Dried -
200 g almond flour
180 g whole rice flour
200 g buckwheat flour
100 g coconut sugar
4 g baking soda
6 g baking powder a
pinch of salt
Wet -
335 grams of water
160 grams of orange juice
100 grams of olive oil
70 grams of apple sauce
30 grams of almond butter
5 grams of lemon zest
6 grams of psyllium powder
preparation method:
Preheat the oven to 170 degrees.
In a bowl - mix all the dry ingredients well.
In another bowl mix all the wet ingredients.
Pour the dry ingredients into the bowl of wet ingredients and mix well with a whisk until a uniform and smooth texture is obtained.
Add the dough to your baking pan, be sure to spread a little oil on the pan before adding the dough or use baking paper instead - we used a 22/10 cm rectangular pan.
You can decorate the top with chopped almonds (as in the picture) - optional.
Bake for about 80 minutes (can vary by oven, it is recommended to check every 30 minutes).
It is important to cool the cake before removing from the pan (at least 4 hours).

Macadamia chocolate mousse with blueberry sauce
Mousse is easy to make, pampering and even though it is in the dessert category - it is nutritious.
Macadamia Chocolate Mousse:
200 ml water
110 g macadamia butter
100 g pure maple syrup
45 g cocoa butter
30 g cocoa powder
8 g vanilla extract A
pinch of sea salt
For blueberry sauce:
65 grams blueberries
45 grams pure maple syrup
10 grams lime juice
4 grams vanilla extract
Grated from half a lime A
pinch of sea salt
Step One - Macadamia Chocolate Mousse
Bring the water to a boil with the maple syrup, vanilla extract and a pinch of salt in a small saucepan.
Put the cocoa butter and cocoa powder in a large mixing bowl and pour in the hot sweet liquid of maple syrup, vanilla and water.
Mix well until all the cocoa butter has melted and the mixture has cooled slightly.
Add the macadamia butter to the bowl and mix until a uniform mixture is obtained.
Place the bowl in the refrigerator for about 15 minutes.
Whisk with a whisk for a few minutes to obtain a lighter, airier and thicker mass than the original mass.
The mixture will still be slightly liquid but with air bubbles.
Pour the mass into a bowl / container with a lid and leave in the refrigerator for at least 3 hours before serving.
Step Two - Prepare the blueberry sauce
Chop 20 grams of the blueberries and place in a bowl together with the rest of the sauce ingredients and mix well.
Pour the sauce over the mousse when serving.
The mousse can be poured into individual cups or into a mold in the center of the table as a sharing dish.
