Before getting started
Make way for the organization and the material necessary for this puff pastry preparation.
Namely, "a baking sheet, baking paper, a brush, a stainless steel ring, a rolling pin, a cutter - or a sharp knife blade - in order to precisely cut the dough into a round shape and a piping bag or a large tablespoon to distribute the almond cream, ”recommends Nicolas Paciello.

Make a success of your puff pastry
The watchword for a crunchy and delicious puff pastry? “Patience,” explains the pastry chef. The more patient you are, the more beautiful the cake will be. Better to prepare the dough the day before and let it rest in the fridge overnight, ”he says.
Regarding the recipe, for 500g of puff pastry: mix 250g of sifted flour, 11cl of water, 200g of butter and a pinch of salt. This mixture is called a “tempera”. Then form a homogeneous ball and spread it out.
Then add the butter in the middle of the tempera and fold everything into a wallet. The golden rule: "the butter must have the same temperature and the same texture as the tempera, neither too hard nor too melted". Then fold four times and let rest in the fridge.
Once out of the refrigerator, roll out the dough using a rolling pin and cut out two circles with a stainless steel circle.
How to make his frangipane?
Using a pastry bag, spread the almond cone on the puff pastry.

To make a frangipane, mix 65 g of softened butter, 85 g of ground almonds, 5 g of cornstarch, 2 eggs + a yolk, 55 g of icing sugar, 30 g of brown sugar and a capful of rum.
With a pastry bag, spread the preparation on the first round of dough in a circle (see photo above).
Without forgetting, of course, to drop a bean in it.
Then, “leave 2.5 cm of space between the cream and the edge and then brown this small empty area with an egg yolk.
Stick the second round of puff pastry, ”continues the pastry chef.
Leave to rest for an hour in the fridge before decorating the galette and cooking it.
Dressage
Alternatives to almond cream
To change from the classic frangipane, we go for nuts, chocolate or fruit.
“The pancake will be just as good with pistachio, chocolate ganache, cocoa powder or even apples,” says Nicolas Paciello.
Place the gilding and coloring with "a first layer of egg yolk that is applied with a brush without running it on the sides.
Leave to set again in the refrigerator then repeat the process, ”explains Nicolas Paciello.
Then you just have to decorate it.
With a knife point, line the dough in arcs from the middle to the outside.
Without forgetting to prick everywhere with a toothpick or a fork.
Cooking
Preheat the oven to 210 ° C (th.7).
“The secret to the crispness of the pastry is that it is piping hot.
Even if the cooking will be done at 175 ° C (th.6), it is better to give a boost at the beginning and not to lose degrees when opening your oven ”.
In total, 40 minutes of cooking.
Nicolas Paciello's trick?
"Place a pie plate on the pancake after 20 minutes, to prevent it from swelling."
Once ready, we season it with “a little syrup - water and sugar - spread with a brush”.

Conservation
As the galette des rois tends to dry quickly, the pastry chef recommends keeping it in an "airtight box".
To reheat it, it will be "10 minutes in the oven between 150 and 160 ° C".
