Once you've tasted it, it's hard to live without it!
Comté bao with XO sauce quickly became one of the signature appetizers of the Asian pop canteen of the talented Levha sisters (also at the head of the nearby Le Servan bistro).
Served in pairs, the bread balls (traditionally steamed in China), crispy and soft, contain a runny heart of Comté, to be dipped in a mayo with a Hong Kong sauce made from seafood. The house loves baths of oil (but not only) since two other dishes are must-haves: crispy pata (chuck of Auvergne pork confit and fried with three sauces) and breaded chicken wings with prik pao sauce.
