How does wine fit into a particular dish?



This intriguing question was asked to be answered by four well-known Israeli chefs, who took part in the filming of a special clip as part of Binyamina Winery's new campaign that deals with the perfect match between the worlds of wine and culinary, all on the occasion of the winery's 70th anniversary next year.



We sneaked behind the scenes of the filming to hear the answers up close.



"We wanted to show how wine fits into the experience in different kitchens," explained Omar Ben Horin, the winery's marketing director.

"We chose for each wine chef from the leading series of the winery, and each of them developed a dish that he thinks speaks best with the same wine and its flavors. This connection between wine and food creates a holistic, more complete and correct experience for us."

- A partner in the "Mahniuda" group and chef-owner of the Jerusalem "Tzemach" restaurant, he was inspired by one of the most well-known and delicious Spanish dishes - Meadow Blanco.

"As soon as I had to combine the wine with a straight dish, I had this dish - roasted beets on a meadow blanco, which is a cold almond soup, with strawberries, pine nuts, arisa oil and a twill of black sesame seeds.



Ido Feiner

, Chef and owner of the "Roberta Vinci" restaurant, took the obvious connection between wine and food to the country with which he is most identified - Italy of course, when he decided to make capalti, which is a kind of Italian dumpling.

"I plan to fill it with local lava cheese and add moss that is at its peak of the season and a green stew," Feiner said.

"Every dish wants wine, it goes together. I remember they once said red wine goes with meat and white wine with fish, but today it's much more open. Today we talk more about sourness and fruitiness. In my opinion, what tastes good to you and you have fun with the dish, That's probably also what's right. "
