Great chefs love chocolate.
After Alain Ducasse, Yannick Alléno opens in the heart of the 7th arrondissement, in collaboration with Aurélien Rivoire, his faithful pastry chef, a shop dedicated to their creations.
"The challenge is to make chocolate without sugar
," says the man who has six stars at the Pavillon Ledoyen.
As if they were starting from scratch, Yannick Alléno and his sidekick are experimenting with sauces and fruit confits, playing on bitterness and textures.
On the elegant boxes, arranged on the marble counter and the shelves in the form of arches, one can read "Chocolatier since 2021".
A nod to this new adventure that is here to stay.
Excited by this latest project, the 53-year-old Parisian chef recalls that he had his pastry chef's CAP at a very young age.
