This is a very good promotion, which demonstrates, beyond the resilience of the chefs, a tremendous vitality and a great creative power, and this throughout the territory, highlighting a diversity of identity and products regional.

80% of the restaurants in the Guide are located outside Paris.

With six promoted to the green star, France remains the country most concerned with sustainability.

However, there are only 49 new stars, compared to 57 in 2021 and 63 in 2020…

The consequences of the health crisis are still being felt, and its long-term impact is still uncertain.

But many projects have emerged, carried by established chefs as well as by young people who are starting out.

Beyond quantity, the dynamic is driven by quality.

The crisis has pushed chefs to refocus on the essentials, simplicity, seasonality, sustainability, but without compromising on quality.
