Abdul Rahman Sweid, the owner of a pastry bakery in the Al-Jamiliya neighborhood in Aleppo, tells SANA that the Ramadan bread industry or Maarouk has developed over time, especially in Aleppo, where many distinct ingredients have been added to it, such as chocolate fillings. Dates, bananas and all kinds of fruits in addition to cheese fillings, raisins, cream, honey and other types and unique flavors.
Suwaid indicated that the stages of maaruk bread also developed from manual to automatic and became linked to the rituals of the month of Ramadan as an annual tradition preferred by those fasting at their tables.
Samer Al-Mahmoud Al-Mohammed, the owner of one of the bakery stores, explains that his dough consists of flour added to vegetable oil, ghee, sugar and water, in addition to fennel, anise and Mahlab. These ingredients are kneaded and mixed well, then left for an hour or more until they ferment in special ovens, then distributed on the plates and sprinkled on their face. Sesame and nigella are introduced into the oven until cooked.
Al-Mohammed pointed out that the people of Aleppo are very keen on this popular Ramadan food, which is in great demand during the month of Ramadan.
