A magnificent specimen of around 400 g, of Axuria veal from the Basque Country, thickly sliced.
So that here the pleasure is double: the grilled and crispy side towards the extremities and the tender, the rosé and the juicy the closer you get to the bone.
Superb cooking exercise.
The meat is accompanied by a model of homemade mayo punched with Sarawak pepper and a green salad with a spicy sauce… A classic of the house.
