Ingredients:

Bottom

:

  • A cup and a half of oats

  • A quarter and a half cup of cane sugar

  • 4 tablespoons solid coconut oil + a little to lubricate the mold

For the cake filling:

  • 43 cups cane sugar

  • 350 grams of soft tofu

  • A cup of cashews soaked in water for 20 minutes

  • 375 grams of soy yogurt without additives

  • 43 cups soy milk

  • 41 cup squeezed lemon juice

  • Lemon zest from half a lemon

  • 1 teaspoon quality vanilla extract

For berry sauce:

  • 300g mix of frozen berries

  • 3 tablespoons natural sesame agave maple

Preparation:

  • Preheat oven to 180 degrees.

  • Transfer the bottom ingredients to the food processor: oats and sugar.

    Grind until a flour mixture is obtained.

  • Add coconut oil and grind until a slightly sticky and crumbly mixture is obtained.

    Place baking paper on the bottom of the pan and grease the sides as well, with coconut oil.

    Transfer the mixture to a pan and fasten well.

  • Transfer the mold to stabilize in the refrigerator for 10 minutes -

    it is recommended not to skip this step.

  • Place the pan in the oven for a short baking time of 10 minutes, until lightly browned.

  • After removing the bottom of the cake from the oven, it should cool slightly before adding the batter, otherwise the bottom will absorb everything.

  • Meanwhile, grind the tofu in a powerful blender together with a quarter cup of soy milk until smooth and creamy, without lumps.

    Transfer to a bowl with a spatula.

  • Grind the cashews together with half a cup of soy milk until smooth and add to the bowl.

  • Add a teaspoon of vanilla extract, sugar, lemon zest and soy yogurt and mix.

  • Add the lemon juice and mix well.

  • Pour the cake batter into the mold, gently tap the mold on the counter, to release air bubbles in the cake and place in the oven for 60-50 minutes.

  • After the cake is ready, take it out of the oven to set.

    Do not worry- at this point, the cake will not look completely ready and it looks like it is not baked to the end.

    It can be seen that it is prepared according to the small grooves that have formed and before the browning at the edges.

  • It is recommended to cool the cake and transfer to the refrigerator to set, overnight (8 hours).

  • Prepare the sauce:

  • In a small saucepan, add the berries and syrup to the sweetener of your choice.

  • Cook over a low flame for 10 minutes, with the lid closed until a dark sauce is obtained.

  • Grind the berry sauce we prepared in a blender and refrigerate.

    Next, pour over the cooled cake.

  • You can decorate with berries, small mint leaves, coconut chips, lemon zest and whatever you like.
