Shavuot is our favorite holiday, because on what other holiday will pasta be served to you as a main course?

So we recruited our favorite chefs - Israel and Tamara Aharoni, for a series of pasta recipes for the whole family, and this time - orquita in a simple and excellent sauce from the south of Italy

The first pasta that the Aharoni's make is pasta orquita, which is translated into Italian: small ears, but it is reminiscent in shape of small shells, and one of its great advantages is that the sauce that is roasted into it also goes into the oysters, making it especially juicy and pampering.



The sauce we paired this time with is a Dom-Italian character, super simple, based on olive oil, onion, garlic, hot green pepper, sage, cherry tomatoes and anchovies.



This pasta dish is proof that when you choose quality ingredients, even a simple dish to prepare - becomes a celebration.

Orcaita with cherry tomatoes, olives and anchovies

Ingredients

    • 1 pack Orcaita pasta

    • ¼ Olive oil

    • Finely chopped purple onion

    • 2 cloves finely chopped garlic

    • ½ Hot, chopped green pepper

    • 4 meatball anchovies

    • 6 sage leaves

    • 300 grams of colored cherry tomatoes, cut into quarters

    • From salt

    • Black pepper

    • 12 chopped Kalamata olives

    • 2 tablespoons balsamic vinegar

    • 3 tablespoons chopped chives

Preparation

How to make an orca with cherry tomatoes, olives and anchovies?

  • 1 Cook the pasta in a pot with plenty of boiling salted water until it is done.

  • 2 Put the oil, garlic and sage in a wide, flat pot and when the oil is hot, add the onion and hot pepper, fry for about a minute.

  • 3 Add the tomatoes and olives, salt and pepper and fry while stirring for about three minutes.

  • 4 Transfer the pasta directly from the cooking water into the sauce pot, with a little of the cooking water, and add more salt and black pepper.

  • 5 Add the balsamic vinegar and cook together for another minute.

  • Sprinkle over the chives and grated Parmesan cheese.
