In our country, the picnic is known only to connoisseurs and meat lovers - the butchers call it "Spitz Czech".
This is a slice with a great meaty flavor, it is not particularly oily but juicy and full of flavor.
Throughout South America picnic is a particularly popular portion, especially in Brazilian chores (eat-as-you-can-eat restaurants).
The Black chain prepares a particularly fine hamburger from the picnic.
Seasoned with garlic confit and peanut butter.

Ingredients:
1400 grams picnic meat
1/4 teaspoon finely ground black pepper
½ teaspoon grams salt
3 tablespoons garlic confit
50 grams soda water
150 grams fried peanuts
Preparation instructions:
1. Grind the meat and mix with soda water, pepper and salt.
2. Add the garlic and stir a little more, until the garlic begins to fall apart in the dish.
3. Pat and remove air from the mixture.
4. Prepare six equal balls and roll in peanuts without mixing, just as a coating.
5. Shape into a hamburger shape and let rest for about an hour in the refrigerator.
Prepare on the grill.
Garlic confit easy to prepare:
Very simple: Place peeled garlic cloves in a stainless steel pot, cover with fine olive oil, add a small rosemary leaf and a piece of red chili.
Cook everything together on a low flame, about ten minutes - until the garlic is soft and the whole house is full of aroma.
Drain into a clean jar and close.

THE SECRET INGREDIENT: This is the most secretive secret of anyone who makes a good, fresh meat burger: let it rest.
Prepare a mixture and refrigerate it for half an hour, to form an emulsion.
Make nice round patties, and let them rest in the fridge for at least another half hour, before grilling.
