Yonatan Shachar from Papi Restaurant in Eilat talks about the ideal hamburger for him: "The perfect hamburger patty for me is made from beef and lamb fat. Fine, fresh meat with a high percentage of fat is preferred for boneless asado.

Ingredients (10 units):

500 grams of lamb fat (lye)

Preparation:

The patties (200 grams per unit)

Chop the meat coarsely and gently - which is the most important part.

Roasting tips:

I always believe in grilling meat on a charcoal grill, the flavors and aromas obtained from the grill simply cannot be obtained in any other grilling.

It is important to keep the temperature not too high so that the patty does not burn (around 200 degrees).
