Ingredients
For dough:
לבן kg of white flour (3 and 1/2 cups)
300 ml lukewarm water (1/4 1 cups)
Flat teaspoon dry yeast (5 g) dry yeast or 15 g of fresh yeast
A heaping teaspoon of fine salt
1-2 tablespoons olive oil (+ 2 tablespoons olive oil to brush the pastries)
For coating:
Well beaten egg
2 tablespoons sesame seeds
To fill:
250 grams of cream cheese
250 grams of skinny cheese (good taste, ricotta)
150 grams of gouda or grated mozzarella
100 grams of tomato paste
Dry oregano
A handful of Kalamata olives are filtered, pitted and coarsely chopped

How to make a family pizza snail?

Preparing the dough:
In a mixer with a kneading hook, place all the ingredients.
Mix at medium speed for 5-6 minutes, until a uniform, smooth and silky dough is obtained (you can also knead manually for 8-10 minutes).
Transfer to a greased bowl, cover with a plastic bag or cling film and swell for an hour and a half or until doubled in volume.
4 For the
filling:
Mix all the ingredients for the filling mixture in a bowl.
Taste and add salt to taste.
5 Preheat oven to 180 degrees.

Form the pastries:
Remove the volume from the puffed dough.
7 Roll out the dough balls on a floured or greased surface, into a large rectangular sheet 1/2 cm thick.
8 Cut the leaf lengthwise with a knife or pizza roller.
9 Place half of the amount of filling in the center of the lower half of the leaf and keep the edges clean 1-2 cm thick.
10 Fold the side over the filling and close to a kind of roll.
Transfer the stuffed dough to a greased pan with a diameter of 24 and place it in the center in the shape of a snail.
11 Repeat the filling and rolling operation with the rest of the dough and the filling, and place it next to the snail you created so that it will continue its shape.
12 Using kitchen scissors or a small, serrated knife, make slits in the snail every 5 cm or so.
13 Brush the pastry with beaten egg and sprinkle over sesame seeds.
14 Bake in the hot oven for 45-60 minutes, until golden and completely baked in the center.
Allow the pastry to cool slightly before removing from the pan, slicing and serving with a salad you like.
