Ingredients

    • 1 large sweet potato (about 400 grams), boiled or baked

    • 2 eggs

    • ⅓ Cup maple

    • 2 tablespoons butter

    • 1 teaspoon cinnamon

    • 1 teaspoon vanilla extract

    • 1 tablespoon finely grated ginger

    • ½ A teaspoon of salt

    • 1 cup flour

    • Thin oatmeal (for quick preparation)

    • 1 teaspoon baking powder

    • ½ As a baking soda

    • 1 Corsovion

    • Butter for frying

  • To serve:

    • Maple

    • Sour cream

Preparation

How to make sweet potato and oatmeal pancakes?

  • 1 Peel the sweet potato and mash it into a smooth puree, transfer to a large bowl.

  • 2 Add the rest of the ingredients and mix to a uniform mixture.

  • 3 Heat a large skillet and melt a little butter in it.

    Using two spoons, remove from the batter to the hot pan and fry for about 3 minutes on each side until the pancakes are golden on both sides.

  • 4 Serve with sour cream and maple syrup.
