Ingredients
1 large sweet potato (about 400 grams), boiled or baked
2 eggs
⅓ Cup maple
2 tablespoons butter
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 tablespoon finely grated ginger
½ A teaspoon of salt
1 cup flour
Thin oatmeal (for quick preparation)
1 teaspoon baking powder
½ As a baking soda
1 Corsovion
Butter for frying
To serve:
Maple
Sour cream

Preparation
How to make sweet potato and oatmeal pancakes?
1 Peel the sweet potato and mash it into a smooth puree, transfer to a large bowl.
2 Add the rest of the ingredients and mix to a uniform mixture.
3 Heat a large skillet and melt a little butter in it.
Using two spoons, remove from the batter to the hot pan and fry for about 3 minutes on each side until the pancakes are golden on both sides.
4 Serve with sour cream and maple syrup.
