As a noodle manufacturer, the Dinkel family business in Malching is facing competition from the district.

In Tegernbach (Mittelstetten), farmer Andreas Helgemeir wants to use a cowshed on his parents' farm for his own pasta production.

Tegernbach – Because at Helgemeirs there are always eggs that are not suitable for sale but are suitable for making pasta.

Helgemeirs are not new to the pasta business.

In the past, they supplied eggs for a pasta manufacturer in the Aichach-Friedberg district and sold the finished pasta in their own farm shop.

However, the local manufacturer will retire in the foreseeable future, other smaller companies are working at full capacity.

So they came up with the idea of ​​making the pasta themselves.

According to Helgemeir, the manufactory first needs a dough kneader, then the actual pasta machine, which can form up to 70 different types depending on the die, and finally drying rooms equipped with air dehumidifiers and fans.

750 kilos of pasta in three days

And a few helping hands are needed, because the eggs have to be cracked beforehand.

With a planned production of 750 kilograms on a total of three days a week, however, employees from outside the family can probably be dispensed with.

The electricity requirement is to be covered by a photovoltaic system.

The community has already approved the project.

The plans are now in the district office for final approval.

Although the number of chickens in the company's own mobile stalls is set to increase to around 700 animals, in the future it will be mainly foreign eggs that will be used.

The finished noodles can then be marketed under their own label - only with reference to the Tegernbach production facility.

Helgemeir calls this type of service “wage noodles”.

Apparently the demand is great.

The grain for the pasta does not (yet) come from our own fields.

Ordinary noodles are usually made from durum wheat, which is not of the required quality everywhere in this country.

In the long term, however, part of the 40 hectares of cultivation area could also be converted, and whole grain products would also be possible.

According to Helgemeir, organic pasta is not planned for the time being.

Products with wild herbs

Andreas Helgemeir wants to produce eight varieties in Tegernbach – from soup to tagliatelle.

Conventional, “white” noodles promise the greatest sales.

But "experimenting is always possible," says the 35-year-old.

Hop, chocolate and cinnamon noodles already exist as niche products.

Helgemeir also wants to create more interesting aromas with wild herbs such as wild garlic and nettle.

He himself will concentrate on the agricultural core business.

Dairy farming is abandoned, but chicken farming, cattle fattening and arable farming remain.

His wife Susanne becomes the actual pasta manufacturer.

The new commercial mainstay is considered future-proof.

Noodles are always eaten, they have a long shelf life and are quick to prepare, but guests can still demonstrate their own cooking skills.

And regional products are trendy.

Only tastes are different.

While the father of three children likes to eat chilli noodles, but remains pretty much alone in the family with this preference, his wife prefers the conventional: "Stink normal spaghetti." (Olf Paschen)
