Scientists from Russia's Vyatsk University have discovered a way to get the sweet-tasting protein praseine, which is a harmless alternative to sugar and 2,000 times sweeter.
The Russian newspaper Izvestia quoted the university's media office as saying in a statement that "this substance should become an alternative to all carbohydrate sugars in the world and contribute to the fight against obesity."
In turn, Sergey Litvinets, Vice President for Scientific Affairs, said that "the production of a wide range of low-calorie products requires effective technologies for the production of praseine protein," noting that the main goal is not to obtain praseine protein itself, but rather to find technological solutions that reduce the cost of production.
Litvinets explained that scientists are planning to create a genetically modified product and an effective purification technology, and this work is currently in the stage of assembling the genetic combinations and selecting the ideal genetic elements that guarantee an abundant production of the required material.
