The Russian nutrition expert, Professor Margarita Koroleva, advised eating some vegetables, such as boiled carrots, to get the maximum benefit from them.
The expert indicated to Radio Sputnik that many vegetables do not lose their beneficial properties to the body after heat treatment, but rather their usefulness increases because some of the fat-soluble vitamins in them become easy to absorb, pointing out that the body's absorption of vitamin "A" from boiled carrots is easier and better than in raw carrots. .
The professor explained that the heat treatment of vegetables helps in activating the lycopene found in tomatoes and red peppers, which improves its absorption process. Lycopene is very important for tissue health, blood condition and men's health.
While the Russian nutrition expert advised people who suffer from digestive diseases to eat turnip and radish because they contain coarse dietary fibers, but after heat treatment, these fibers become easy to digest.
