Thierry Marx is also the founder of a second-chance cooking school, Cuisine mode d'emploi(s).

Created ten years ago, it trains young people without a diploma, people in reintegration or professional retraining, but also people with disabilities.

Whether the people have a disability or not, the training is almost the same in our ten schools in France.

It is up to us to adapt to the needs of the person who wishes to be trained.

Training is not about putting people "in compliance" but about transmitting to them a passion for the profession, thanks to good technical gestures for example.

Is it difficult to work with them?

Above all, you have to be very open.

When you train people who have been excluded from employment, in precarious situations or with disabilities, this does not pose any particular problems.
