2022-07-18T21:34:01.152Z

Second last year, chef Rasmus Kofoed's table won ahead of Central (Lima) and Disfrutar (Barcelona). Copenhagen continues to assert itself as the world capital of gastronomy. And France, absent from the top 20, leaves once again disappointed.

No big surprise at the World's 50 Best Restaurants.

The 2022 ceremony, initially scheduled in Moscow but relocated to London, where the ranking was born 20 years ago, due to the war in Ukraine, delivered its expected verdict this Monday evening at Old Billingsgate.

During an Oscar-style ceremony, in the presence of many chefs from around the world, the contested but influential ranking, owned by the British group William Reed, crowned Geranium, in Copenhagen (Denmark), best restaurant in the world.

Already second last year, behind his compatriot Noma by René Redzepi, the establishment of chef Rasmus Kofoed, three-starred in the Michelin guide since 2016, is located on the top floor of a football stadium, with a panoramic view of the park around.

In a menu billed at 3200 DKK (approx. €430), the chef, who was captain for 7 years of the Danish team at the Bocuse d'Or (and gold medalist in 2011), sublimates in ultra creative and very graphs local and seasonal products: organic vegetables, fish, seafood... It hasn't served meat for a few months.

Geranium is ahead of the Peruvian Central (Lima, +2 places compared to 2021), Disfrutar (Barcelona, +2), DiverXO (Madrid, +16), Pujol (Mexico, +4), Asador Etxebarri (Atxondo, Spain, -3 ), A Casa do Porco (São Paulo, Brazil, +10), Lido 84 (Gardone Riviera, Italy, +7), Quintonil (Mexico City, +18) and Le Calandre (Rubano, Italy, +16).

Frantzen (Stockholm, 25th), Maido (Lima, 11th), Odette (Singapore, 36th) and The Chairman (Hong Kong, 24th) therefore come out of a top 10 dominated by Spain with 3 restaurants, ahead of 2 for Mexico and Italy.

3 French in the top 50

On the French side, the figure of 3 tables in the 50 in 2021 remains unchanged.

Septime (Paris 11th), of the Grébaut-Pouriat duo won two small places and ranked 22nd.

The Clarence (Paris 8th) of Christophe Pelé, knows him, a huge progression of 56 places, and climbs on the 28th step.

Finally the Arpège of Alain Passard (Paris 7th), 31st, loses 8 places.

The latter had not made the trip to London.

Last week, 5 other French restaurants had climbed to the bottom of the ranking (51 to 100): Alléno Paris at Ledoyen (58th, -17), La Grenouillère at Madelaine-sous-Montreuil (61st, +30), Table in Paris (77th, incoming), AM in Marseille (80th, incoming) and Flocons de Sel in Megève (99th, incoming).

If France leaves with the “One to Watch” prize for the chef to follow for Alexandre Mazzia, the blue-white-red harvest (8 tables out of 100) proves, once again, to be quite disappointing.

A result that should hardly surprise Nicolas Chatenier, adviser to great chefs, author and responsible for the 50 Best for the France zone since 2016, who has just published the essay

The English Key – Geopolitics of Gastronomy

(Fretin Menu), calling the world of French gastronomy to structure itself, via a national instrument, on the model of the French Fashion Federation or Unifrance for the cinema, in order to occupy the place it deserves on the world culinary scene.

The prize for best pastry chef was also awarded to René Frank (Coda, Berlin), that of female chef to Leonor Espinosa (Leo, Bogota), that of sommelier to Josep Roca (El Celler de Can Roca, Girona) and that of of the icon to Wawira Njiru, a social entrepreneur in Nairobi (Kenya).

The World's 50 Best Restaurants list is drawn up by a jury of 1,080 experts, divided into 27 regions: each includes 40 members (chefs, journalists, "foodies") called upon to vote for their favorite tables.

The votes are certified by the consulting firm Deloitte.
